"Raw" stands for cocoa that has not been roasted and therefore contains more of the valuable ingredients of cocoa beans than comparable chocolate from conventional production. The particularly reserved processing of the beans creates a taste in which the natural acids and bitter substances of the cocoa come to the fore in a strikingly clear manner.
