"Cioccolato di Modica "refers to chocolates that are produced in a unique process. The cocoa is only roughly ground and then mixed with sugar at around 35° C. Due to the low temperature, it is referred to as cold chocolate - the Sugar crystals are retained and shape the unique, rough texture.
