Dark chocolate bar with at least 71% cocoa, made from the rare Criollo bean. Criollo cocoa is an absolute rarity, which is only processed in a few chocolates. The cocoa for this bar comes from Venezuela, where some of the world's best cocoa plantations are run. In contrast to bulk cocoa from the Forastero bean, which is cultivated primarily in West Africa and is endowed with a rather robust, mostly undifferentiated taste, the aroma of Criollo cocoa develops rather gradually on the palate, delighted with finely chiseled acidity, a pronounced one Fruitiness and long reverberation on the palate. In order to bring out this attractive network of flavors as clearly as possible, vanilla is not added to this chocolate. The list of ingredients reflects this self-limitation to the essentials: cocoa mass and cocoa butter, sugar and a small and aromatically imperceptible addition of soy lecithin as an aid to clean emulsification.
